Keto Zuppa Toscana
The first of our Keto Comfort Soups is the Keto Zuppa Toscana Recipe.
Quick and easy, this one-pot Italian-inspired delicious soup is all you need to help make the world feel right again.
Prep Time: 5 minutes
Cook Time: 20 Minutes
Serves 8
Ingredients:
- 1 small onion diced
- 3 cloves garlic minced
- 4 cups cauliflower fresh or frozen
- 2 cups kale or baby spinach chopped
- 1 lb mild Italian sausage
- 6 slices bacon chopped
- 1 cup heavy whipping cream
- 4 cups of low sodium chicken broth
- 1/2 tsp crushed red peppers optional
- Salt and Pepper to taste
How to Make It
- In a large pot over medium-high heat, brown the sausage and bacon, add the onion and garlic and sauté for a few minutes.
- Drain the excess fat and the chicken broth, cauliflower, and crushed pepper flakes. Simmer over medium heat for about 15 minutes or until the cauliflower is tender.
- Reduce the heard and stir in the heavy cream, mixing well. Finally, stir in the fresh kale or spinach.
- Serve hot topped with your choice of either parmesan cheese or crispy bacon bits.
- Store any leftovers for up to four days in the refrigerator.
Low-Carb Cream of Mushroom Soup

Rejoice, mushroom lovers, this low-carb creamy soup is hardy and packed with flavor but without guilt.
Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 8
Ingredients
- 1 tbsp olive oil
- 4 tbsp butter unsalted
- 10 cups (750g) fresh brown mushrooms sliced
- 4 cups chicken broth or vegetable broth low sodium
- 1 cup heavy cream or canned unsweetened coconut cream
- ½ tsp xanthan gum optional to thicken the soup
- 1 yellow onion diced
- 4 cloves garlic minced
- 4 tsp fresh thyme divided
- ½ cup white wine
- 1 tsp sea salt
- ½ tsp black pepper freshly cracked
- A pinch of paprika
- Chopped fresh parsley to serve
How to Make It
- Heat the olive oil and butter over medium-high temperatures in a large pot
- Sauté onion for 2-3 minutes until softened. Add the garlic and cook for about 1 minute until fragrant, be careful not to burn the garlic
- Add the mushrooms, 2 tsp of thyme, and the wine. Simmer over medium heat for 5-7 minutes
- Sprinkle the mushrooms with xanthan gum and stir well, cook for about 2 minutes
- Slowly pour the broth onto the mushroom mixture and bring to a boil
- Reduce heat, cover, and simmer for 12-15 minutes, or until the soup thickens
- Remove from heat and stir in the heavy cream or unsweetened coconut cream
- Puree the soup using a stick blender
- Add salt and pepper to taste
- Mix in the fresh parsley and remaining thyme before serving
